Which TR19 frequency band restaurants fall into

Fire law, insurers and your risk assessment
The Regulatory Reform (Fire Safety) Order 2005 puts the duty on the responsible person, usually the employer, owner or whoever controls the premises, to assess fire risk and keep fire safety measures maintained. Grease building up in the duct is a hazard that assessment should name. BESA notes that many insurers now ask for cleaning certificates and inspection reports at renewal, and that a claim can be refused when poor maintenance contributed to a fire. Hereford and Worcester Fire and Rescue Service points out that since 1 October 2023 every responsible person has had to record the fire risk assessment in full, however few people they employ. Local fire and rescue authorities inspect premises and can issue fire safety notices.
What a full clean covers

TR19 Grease expects access panels along the duct, every 2 to 3 metres where that is possible, so concealed sections can be reached. Deposits are measured before and after against a mean limit of 200 microns between cleans, and the certificate comes with before-and-after photographs taken from the same positions, plus a note of any section that could not be reached.

Most restaurants book the clean after the last covers or early in the morning before prep starts, so no service is lost.
