Fire risk assessment, insurance and hygiene

The Regulatory Reform (Fire Safety) Order 2005, enforced by your local fire and rescue service, requires the responsible person to assess and reduce fire risk, and a greasy canopy and duct is a hazard that assessment should cover. Insurers may refuse a claim if a fire is traced to a poorly maintained system. Your food hygiene rating is set separately, under the scheme councils run with the Food Standards Agency. Officers look at how food is handled and at the condition of the premises, including cleanliness and ventilation, and rate the business from 0 to 5. In England you are encouraged, but not legally required, to display the sticker. Leicestershire Fire and Rescue Service also lists restaurants and cafés among the places where laundry can catch fire on its own, because tea towels, aprons and cloths soaked in cooking oil can self-heat if they are stored before they have cooled.

What a full clean covers

Even a small café extract has the same parts. The provider cleans the canopy and filters, the full ductwork run to the discharge and the extract fan, with access panels fitted where needed. Grease depth is measured before and after against the mean limit of 200 microns that TR19 Grease sets between cleans, and you receive a certificate with before-and-after photographs. If you close by late afternoon, an evening clean is straightforward and costs no trading time. Does a small café need TR19 cleaning?

If you have a commercial canopy and extract duct, the same fire risk applies whatever the size of the kitchen. A café cooking 2 to 6 hours a day falls in TR19's light band, which means a clean at least once a year, and more often if frying leaves heavy deposits in the duct.

Can kitchen staff clean the filters between professional cleans?

Yes. BESA advises cleaning and degreasing canopy filters daily or as the manufacturer instructs. That does not replace a full clean of the duct and fan, because no filter is 100 per cent effective and some grease always passes through into the rest of the system.

Do we have to display our food hygiene rating?

Not in England. Councils rate businesses from 0 to 5 under the scheme they run with the Food Standards Agency, and display is encouraged but voluntary here. The TR19 certificate is separate and relates to fire risk, although officers do look at cleanliness and ventilation when they inspect.

When would the clean take place?
