A pub kitchen has to fit food around the bar. Lunch and evening services, busy weekends and a cellar, function room or flat in the same building all shape when the extract can be cleaned. We arrange TR19 extract cleaning quotes for pubs and bars across Birmingham, the Black Country, Burton upon Trent, Nottingham, Derby and Leicester. An independent specialist provider does the work and issues the certificate.

Whether you run a food-led country inn or a city bar with a short grill menu, the questions are the same. When was the whole system last cleaned, and could you prove it tomorrow?

Which TR19 frequency band pubs fall into

TR19 Grease sets minimum intervals by daily cooking hours: every three months for 12 to 16 hours, every six months for 6 to 12 hours and every twelve months for 2 to 6 hours. A pub serving lunch and evening food most days usually sits in the six-monthly band. A wet-led bar with a short evening menu may be light use and annual, while a food-led pub cooking all day can reach the quarterly band. The provider's grease readings confirm which applies, and our TR19 compliance guide sets out the bands.

What the fire service and your insurer expect

The Regulatory Reform (Fire Safety) Order 2005 puts the duty to assess and reduce fire risk on the responsible person, and your local fire and rescue service enforces it. Leicestershire Fire and Rescue Service reminds businesses that routine checks, tests and maintenance of their fire safety features and equipment have to be done and written down, and filing each TR19 certificate in the same log keeps the kitchen extract record in one place. Warwickshire Fire and Rescue Service highlights that since October 2023 there have been greater requirements for responsible persons to cooperate and coordinate where the occupier and the owner of a building are different, which covers tenanted and leased pubs. Insurers may also refuse a claim when a fire is traced to a poorly maintained duct.

What a full clean includes

The provider cleans the canopy and filters, the whole ductwork run to the discharge and the extract fan, fitting access panels where a section is boxed in. Grease depth is measured before and after, and you receive a certificate with before-and-after photographs. Old buildings need extra thought. Ye Olde Trip to Jerusalem in Nottingham, which claims to date from 1189, is built against the sandstone rock that carries Nottingham Castle, with caves cut into it, and the oldest parts of the present building are generally dated to the 1650s. In pubs of that age a duct can take an awkward route through voids and upper floors, so if nobody knows where it runs, book an inspection report first.

Timing it around your trade

Cleans can be booked after last orders or on a weekday morning before opening. Bank holidays, beer festivals and big match days are worth avoiding, and so are the weekends when the beer garden is full. If the kitchen is closed one day a week, that is often the easiest slot. Tell us how the roof or fan is reached and whether the cellar or a flat is on the route, and the provider will plan around it.

Pub companies and multi-site operators

Several major pub operators are based in the region. Mitchells & Butlers, whose pub brands include Toby Carvery, Harvester, Vintage Inns and O'Neill's, has its headquarters in Birmingham. Marston's, founded in Burton upon Trent in 1834, is now a pub and hotel operator based in Wolverhampton, and Everards, founded in Leicester in 1849, owns more than 170 tenanted pubs, mainly around Leicestershire. At its height Burton upon Trent brewed a quarter of all the beer sold in Britain. Whether you manage pubs for a brewer, a pub company or your own group, we can arrange one quote across the estate, with each kitchen on its own interval and certificate. The cost guide explains what drives the price.

Pubs and bars we arrange quotes for

In the Black Country we arrange quotes in Brierley Hill, where the Bathams brewery was founded in 1877 and owns a string of local pubs, and in Stourbridge, Dudley and Wolverhampton. In Birmingham we cover the Irish pubs and craft beer venues of Digbeth, and further north Sutton Coldfield and Lichfield. We also cover Burton upon Trent, Nottingham city centre, Derby city centre and Leicester city centre.

Frequently Asked Questions

How often does a pub kitchen extract need cleaning?

A pub serving food at lunch and in the evening usually falls in TR19's moderate band of 6 to 12 hours a day, which means a clean at least every six months. All-day food can mean every three months, and a short bar menu may only need an annual clean once grease readings confirm it.

We only serve food at weekends. Do we still need a clean?

Yes. Fewer cooking hours mean a longer interval, often annual, but grease still settles in the canopy, duct and fan between cleans. Your fire risk assessment should show when the system was last cleaned, and a dated certificate from a specialist provider is the simplest way to prove it.

Who books the clean in a tenanted or leased pub?

Check your lease or tenancy agreement and agree it with the owner. Warwickshire Fire and Rescue Service notes that since October 2023 responsible persons have had greater duties to cooperate where the occupier and the owner are different. Whoever books it, keep the certificate on site and send a copy to the building's insurer.

Our pub is a very old building. Does that change anything?

It can. In older pubs the duct may run through ceiling voids, roof spaces or upper floors and may have no access panels at all. An inspection report maps the route first, and the provider fits panels where a section cannot be reached, noting anything still inaccessible on the certificate.

Do you employ the cleaners?

No. We arrange TR19 extract cleaning quotes and pass your enquiry to an independent specialist provider, who does the work and issues the certificate. The provider agrees the date, access and scope with you, and you deal with them directly for the clean itself and any follow-up visits.
