The Regulatory Reform (Fire Safety) Order 2005, enforced by your local fire and rescue service, requires the responsible person to assess and reduce fire risk, and grease in the extract belongs in the hotel's fire risk assessment. Nottinghamshire Fire and Rescue Service puts premises where people sleep, or where visitors may not know the layout, in a higher risk category, because a fire can be discovered later and escape can take longer. BESA warns that grease deposits let flames travel along ductwork into other parts of a building, and that insurers may refuse a claim traced back to poor maintenance.
