Which TR19 band a takeaway falls into
TR19 Grease sets the minimum interval from daily cooking hours. A kitchen cooking 12 to 16 hours a day needs a clean at least every 3 months, 6 to 12 hours means at least every 6 months, and 2 to 6 hours means at least every 12 months. A shop open from late morning to around midnight is usually cooking for 12 hours or more, which puts it in the quarterly band. An evenings-only takeaway may be six-monthly. GMFRS says there have been a number of recent fires in Greater Manchester in fast food outlets, takeaways, cafes and restaurants where upper floors are used for sleeping accommodation. Those rooms are often reached by a single unprotected staircase from the public or kitchen area, and GMFRS says such exit routes are often blocked with combustible materials. It asks owners to fit a suitable fire alarm, provide enough fire resistance to stop a fire spreading and keep a safe escape route. In the same guidance it warns that grease, fats and dust in uncleaned extraction ducts can stop ventilation working and help fire spread rapidly, and that most insurers require duct cleaning as a condition of building insurance.
Your duties under the Fire Safety Order
Fire safety law here is the Regulatory Reform (Fire Safety) Order 2005, and the person it holds responsible, normally the employer, must make sure a fire risk assessment has been done and is kept up to date. GMFRS explains that since 1 October 2023 every fire risk assessment must be written down and must record who carried it out. Where the flat is let separately, more than one responsible person is likely to be involved, and a business in multi-occupied premises must take steps to identify the others, including the landlord. Scope of a takeaway clean
A full clean covers the canopy, the filters, the ductwork right through to the discharge and the extract fan. Access panels are fitted where a run cannot otherwise be reached. Food hygiene ratings and long trading hours
Food hygiene is rated separately. A food safety officer from your borough council inspects and rates the business under the Food Hygiene Rating Scheme, run by the Food Standards Agency in partnership with local authorities, and the gap between inspections ranges from six months for the highest risk businesses to two years for lower risk ones.
