Fire safety duties and insurance

Fire law in England, the Regulatory Reform (Fire Safety) Order 2005, makes the responsible person assess and reduce fire risk, and Greater Manchester Fire and Rescue Service (GMFRS) enforces it across all ten boroughs. For care homes, GMFRS signposts the government's residential care premises guide, which is aimed at homes where many or all residents would need a carer's help to reach a place of safety. According to BESA, grease left in kitchen ductwork can carry fire through the duct and on into other areas of a building. In a care home, that could be where residents sleep. There is an insurance angle as well, since BESA says claims can be rejected where poor maintenance lies behind a fire.

CQC standards and mealtimes

The CQC's fundamental standards reach into the kitchen. Under Regulation 15, premises and equipment must be clean, suitable and properly maintained. Under Regulation 14, residents' nutrition and hydration needs must be met, which means meals cannot simply stop for a contractor. The clean is therefore slotted between services or done overnight. Share your mealtimes, explain how the fan or roof is reached and say whether visitors need an escort, and the provider will fit around the home's day.

The provider degreases the canopy and filters, cleans the ductwork right through to the outside, adding access panels wherever they are missing, and cleans the extract fan. Deposit thickness is measured at the start and the finish, against TR19 Grease's upper limit of a 200 micron mean between cleans. Care home kitchens fall under the Food Hygiene Rating Scheme, so a council food safety officer will assess food handling and the state of the premises, ventilation included.
