It also says most insurers make regular duct cleaning a condition of building cover, which may be invalidated if the work is not done. BESA points out that grease deposits in kitchen ductwork can be ignited by fryers, open flames or even radiant heat. GMFRS's home cooking advice applies to any range as well: if the oil starts to smoke, it is too hot, so turn the heat off and leave it to cool.
Living space above the shop raises the risk further. GMFRS reports a number of recent fires in Greater Manchester takeaways, fast food outlets, cafés and restaurants where upper floors were used for sleeping, often with a single staircase down through the shop or kitchen.
