London pub kitchens are often squeezed into old buildings, with the kitchen in a basement or on a first floor and offices or flats on the storeys above. TR19 bands for pub kitchens

TR19 Grease sorts kitchens by daily cooking hours. Two to six hours a day calls for a yearly clean, six to twelve for one every six months, and twelve to sixteen for one every three months. Lunch and evening food on most days normally means a six-monthly clean. A drinks-led bar with a few snacks may only need the yearly one, and a kitchen serving food from noon to close can tip into the quarterly band. GN86, London Fire Brigade's guidance note, sets annual cleaning as the floor for every catering extract unless the fire risk assessment calls for something different. What London Fire Brigade has seen in pub kitchens

In June 2021 a spark from burning wood in a grill ignited fat deposits in the extraction unit of a pub on Conway Street, Fitzrovia, and the system from the first-floor kitchen to the roof vent was destroyed. The Brigade's tips with that report include having ducting cleaned regularly in accordance with TR/19. In September 2024 fat and grease inside the ducting of a pub on Kentish Town Road, Camden, ignited and damaged the ducting from the ground to the third floor, and around 60 people left the building. In March 2025 a fire at a Westminster pub with offices above damaged half of its basement kitchen and destroyed the ducting. That one began with cooking left unattended, yet around 100 people still had to leave, and the Brigade used it to remind owners to keep their extraction systems clean.

The fire risk assessment and your licence

Legally, the duty sits with the responsible person under the Regulatory Reform (Fire Safety) Order 2005, and London Fire Brigade enforces it across the capital. The Brigade's page for nightclubs, bars and pubs tells the duty holder to keep the fire risk assessment up to date so it matches how the venue really runs, busy nights and special events included, and never to exceed the capacity in the premises licence or the assessment. GN86 says the assessment should look at the kitchen extract in detail, and that a fire safety officer auditing the premises will want to see the post-clean verification records. If the pub is leased or tied, agree with the owner which of you arranges the clean and keeps the paperwork.

Inside a full TR19 clean

A full clean starts at the canopy and filters, follows the ductwork right through to the outlet, and finishes with the extract fan. Boxed-in sections get access panels. Grease thickness is measured at the start and the finish, and the certificate comes with photographs taken from the same points. GN86 has fire safety staff check that the extract is a separate, independent system with enough access panels along its length. Where the duct is hidden behind boxing, in a cellar or above a ceiling, an inspection report can trace the route before the clean is priced.

Choosing a date around the pub's calendar

Most pubs book the clean for after last orders or for an early morning before the doors open. Pick a night away from big screenings, bank holiday weekends and sunny Saturdays in the beer garden, and if offices or flats share the building, mention it so noise and access can be planned. How often should a London pub kitchen extract be cleaned?

It follows the hours your kitchen cooks. Lunch and evening food usually adds up to 6 to 12 hours a day, which TR19 Grease puts on a six-monthly clean. Serving food from opening to close can make it three-monthly, while a bar with a small snack menu may only need one clean a year.

Food is weekends only. Is a yearly clean still needed?

Yes. Fewer hours stretch the interval but do not remove it. GN86 makes a yearly clean the minimum for all catering extracts, unless your fire risk assessment says something different.

Our kitchen is in the cellar. Does that matter?

It means a longer duct, usually rising past the bar and the floors above, and every part of it needs cleaning. In March 2025 a fire in the basement kitchen of a Westminster pub destroyed the ducting. Describe the layout when you enquire, or start with an inspection report.

We lease the pub. Who should book the clean?

Your lease should say. If it does not, agree it with the owner. Whoever books it, file the certificate alongside the fire risk assessment and give the building's insurer a copy.
